How to make different line spacing for individual paragraphs on word.?

For my paper I am writing, the teacher asked that we double space our paper, but for quotations from the poem our paper is based on, he wants those single spaced and formatted like they are in the poem. When I try to single space just the poetry, it will single space my written paragraphs, and vice versa. It is REALLY annoying. Is there a way to make it so it won't automatically change the spacing on other paragraphs? If I have a big break in between the actual paragraph and quotation, it doesn't do it but I don't want such big breaks all through my paper.
